Shin Miyazawa, the owner of a ramen shop especially popular among vegan visitors from overseas, said he felt “the cherry blossoms looked gray” when the first wave of COVID hit in spring 2020. Nevertheless, he launched the new bakery business KAMOGAWA BAKERY, which is also vegan and halal friendly, in the same year. In this article, the entrepreneur talks about his motivations on creating the bakery which is also in line with Kyoto’s new agenda for sustainable tourism.
